Spicy Cajun Stew





Good Morning!!!  I thought this morning we'd add a little heat to our morning with this recipe. It's still a dull and foggy morning.  More rain expected here today and tonight but the sun is to return on Friday. I just went out on the deck and it's not really cool but muggy this morning. Great day to just stay in bed and snooze. Unfortunately, I owe I owe, so off to work I go.

Ingredients:

1 package ( 16 oz.) smoked polish sausage or kielbasa
2 cans ( 10 oz. each ) diced tomatoes and green chilies, undrained
1 can ( 14 1/2 oz. ) chicken broth
1 package ( 10 oz. ) frozen chopped spinach, thawed and squeezed dry
1/2 to 3/4 cup uncooked instant rice

Instructions:

In a large skillet, saute sausage until lightly browned; drain.  Add the tomatoes and broth.  Bring to a boil.  Stir in spinach. Return to a boil; cook for 2 minutes.  Stir in the rice.  Cover and removed from the heat.  Let stand for 5 minutes.  Stir with a fork to break up.
